Description: Made with mostly autonomous BLACK MANTLE variety, from
vineyards of the IO Binissalem, over 33 years old, trained on trellises, combined with foreign varieties Cabernet Sauvignon, Syrah and Merlot.
The net return on these is about 7500Kgs / Ha. Credited with organic fertilizers, using basically in natural pesticide treatments products, environmentally friendly collection and proceeding to the end of September. The collection is hand-making INOX transport in a trailer, in a short time to avoid possible oxidations, then destemmed and passes the INOXIDABLES deposits for controlled at 28 for two weeks fermentation, performing their corresponding analytical and pumping. Grape Varieties: 35% Callet, Manto Negre 35%, 30% Cabernet Sauvignon, pruning strains traditional glass. The average ages of unso vines is 20 years.

Vintage: 2017

Preparation: Harvest by hand in small boxes of about 10lbs. Manual selection of the grapes to the winery entrance. Temperature-controlled fermentation in stainless steel tanks and 10000lts 7000., About 28 º C. Macerated for about 17 days on average.

Malolactic: In stainless steel tanks.

Aging: 5 months in French oak barrels.

Alcohol content: 13% vol.

BUTIBALAUSI NEGRE 2019

VARIETY: Tempranillo, Manto Black, Callet and Syrah.

GROWING: Ecological, with applications of some biodynamic techniques.

Winemaking: Maceration and fermentation lasted between 11 and 18 days, depending on variety, at 27 ° C in stainless steel tanks. Once bleeding wine, the right blend is then parenting is done.

So we can state that this wine definitely expresses the whole potential of the grape, without any artificial alterations in the vineyard or in the wine cellar.

As it has never been in the barrel, it preserves, among other, the great qualities of resveratrol, an antioxidant component which favours the decrease of oxidative stress and slows down the whole general wine-aging process.

Soft and fruity, it is the ideal match for both meat and vegetable dishes.

Made from the youngest vines on the estate, which are organically grown.

Wine-making
We pick the grapes by hand, placing them in 10 kg boxes and allow them to rest for 24 hours in a cold store, where we reduce the temperature to 5ºC.  The grapes come into the winery and we make a selection to ensure they are as healthy as possible. We carry out prefermentation maceration in a vat for 48 hours in order to bring out the varietal aromas. Fermentation takes 15 days and is carried out at low temperatures. Once fermentation is over, the grapes are pressed very lightly. We allow the wine to rest and bottle it after gentle clarification and filtering.

Tasting
Medium intensity red colour.

Fruity aromas, such as strawberry, blueberry and raspberry, predominate. Pleasant and evocative.
In the mouth it is a fresh, fruity, light, honest wine, beginning delicately and continuing in a balanced, fruity way. This is followed by a medium aftertaste, very pleasant on the palate.

Serving temperature:
Around 17ºC

Cuisine:
Aperitifs, white meat, cured meats and sausages.

Consumption:
As soon as it comes on the market for the first two years.
