The Cabernet Sauvignon , Merlot and Shyraz be in the cellar for Xaloc grown red wine for white wines, Sauvignon Blanc and Chardonnay.

The harvest begins in late August and lasts for white wine until mid-September for red wine . Grapes are harvested exclusively in selective hand picking .

The same standards apply equally to the winemaking . State of the art technical knowledge associated with traditional proven methods of winemaking . It is necessary to preserve the quality of the grapes. Therefore, only the grapes are processed from their own vineyards .

The largest expansion of red wines is carried out - separated according to the grape varieties - in French , Hungarian and American oak. Depending on how the wines of winemaker , trowel and head winemaker decide base creating own wines . So red wine is then matured Xaloc more approx 18 to 24 months in oak barrels .

After fermentation , the wine and expansion quickly and carefully bottled directly at the winery. The goal is to get the wonderful aroma in its entirety and wines to enjoy a greater maturity in the bottle.

The annual harvest provides a maximum of 15,000 bottles of exclusive wine , of which 12,000 red wine and 3,000 bottles of white wine.
