White wine with limited production using organically grown grapes.
We wait to harvest the grapes at their optimum point of ripeness, normally the second week of September. Harvesting is carried out by hand. Once the grapes have been selected on arrival at the winery, we carry out prefermentation cold maceration, followed by alcoholic fermentation at a controlled temperature of not more than 17ºC.
Once fermentation is over, aging begins on the lees for 4 months, in order to give the wine complexity. After slight clarification and subsequent filtering, we can bottle the wine, which comes on to the market in March.
A golden coloured wine, with a very intense aroma. Ripe white fruit predominates, with floral notes, aromatic herbs and almonds.
In the mouth, it is initially fresh but also intense. With a smooth, fleshy taste. The aftertaste is long and persistent and the aromatic range is present.
Pasta, creamy cheeses, white fish.
As soon as it comes on the market for the first two years.
