Grape Varieties: 95% Callet, 5% Mantonegre and Fogoneu
Pruning: Traditional gobelet method.
Rainfall: 350-450mm
Origin: Originating from three small vineyards in the area of Son Negre, which are gently cooled by sea breezes. Density of fruit trees in half of the vineyard and extreme soil characteristics throughout; poor top soil, high mineral content and low water-retention. Ludicrously-low production of less than half a kilo of grapes per vine.
Production: Grapes are harvested by hand into small 10kg boxes. Manual grape selection before temperature-controlled fermentation in 3,000 litre wooden vats.
Maceration: Average of 25 days.
Malolactic: In barrels.
Ageing: 18 months in new, French, fine-grain oak barrels; low to medium toasted. A further 2 months of tank aging prior to bottling.
Alcohol content: 14,5%
