Process: We have selected the best Malvasias from our vineyard to make this wine, as
well as for the chardonnay and Riesling. The juice is decanted into French oak barrels in
which one the fermentation is realised. To finalize the process, we made a “batonnage”
steadily during 3-4 month. This technique consists to keep in suspension yeasts laid
down at the bottom of the barrel; the aim is to increase the density of its body. At the
end of the winter, we have proceed at the bottling.
Characteristics: Its bouquet has complex and intensive aroma, reminiscent of roasted
almonds, butter, dry apricot and citrus notes. Rounded in mouth, full and light at the
same time. Aroma’s bouquet persists on the palate.
Suggestions: Serve it chill, but not too much cold. We recommend between 12-14ºC. It
can be served with duck, turkey, pork dishes, or sweet and sour dishes. Follow your
instinct.
