Fine and intense bubbles. Wine with a nice intensity, honey and citrus
aromas. Great sweetness at the end.
Vinification
In the vineyard are only allowed natural products: organic fertilizer (manure),
copper against mildew, sulfur against powdery mildew. Excludes all synthetic
products such as herbicides, pesticides, GMOs. Organic standards compliance
is checked two times per year by the Bureau Veritas. Night harvest to
preserve the flavors of the grape. The grapes macerate 2-3 pm in the press
before pressing at low pressure to dissolve a maximum of aromas. It is then
clarified naturally at room temperature for 48 h. Alcoholic fermentation
occurs between 15 ° -18 ° C in stainless steel tanks for 3 weeks. The "prise de
mousse" (second fermentation which generates the bubbles) is done in
bottles. The raising goes on for a period longer than 10 months. The wine is
then refined with a "liqueur de dosage" which gives it its "brut" feature.
