Celler Sa Ca Padrina
Winery founded in 1999 to restore and enhance the traditional wines of Mallorca. The vineyards are located in the town of Sencelles town located in the geographic center of the island , enjoying a spot of tertiary , stony, calcareous clay loam and time.
The vineyard covers an area of 8 hectares, is ordered trellis and pruning double Royat , admitting a charge of 2.5 kg per plant . The harvest is done manually , collected in stackable boxes of 18 kg and fed into the fermentation tanks after collection. The fermentation takes place at a controlled temperature of 23 ° C. The resulting red wine called Montenegro Sufier - Bibi is elegant, very aromatic and balanced between youth and upbringing. Among its organoleptic characteristics, its ruby cherry medium-high color, with fine aroma of ripe fruit expression and hints of berries, plus some toasted ( cocoa and toffee ) . The palate is light , round, with tannins but persistent , even restrained . Retronasal understory of wild grasses . This is a perfect wine for the western Mediterranean dishes .
The winery produces a white wine, Mollet Sufier - Bibi , where the protagonist is the moll native grape .
