Vinification
Manual harvest in boxes of 10 kg.
All the grapes go through the sorting table and skid.
A maceration with their own skins of a few hours is enough to extract the color, then spontaneous fermentation is carried out in a stainless steel vat.
Tasting
Balsamic and intense aroma. The aromatic Mediterranean plants and mint lead us, through a woody part, to a root note reminiscent of licorice.
In the mouth it has a light entry where, little by little, a very citric and tense acidity makes its way. The mouth passage is wide. Finally, it buries us through a bitter root that lengthens it and takes us into the mineral soil.
