Xanet Rosé 2018 Can Xanet
VINEYARD: Finca de Can Xanet, a two-hectare plot located in the north of Mallorca, in the foothills of the Sierra de Tramuntana, with a slight unevenness of 2.7% on a calcareous soil, and overlooking the Bay of Pollensa.
WINE FARMING: The vineyard is cultivated following reasonable practices to obtain quality grapes: plant cover between rows, short pruning, green pruning to keep optimum production, phytosanitary treatments only when essential and using the least aggressive ones for auxiliary fauna, thinning of the bunch after veraison and manual harvest with selection of bunches.
VINTAGE: A year with constant rainfall during all the months except July and the middle of August. For what was a year complicated
VINTAGE: 4 different varieties were used, the predominant one was Cabernet Sauvignon (2,664 Kg), Syrah (1036 Kg), Monastrell (864 Kg), Mantonegro (684Kg), Gorgollassa (205 Kg)
VINIFICATION: The first two grapes started in early September, La Syrah with which we bleed our own grapes and in the case of the Mantonegro, the greenest grape was collected to add acidity to the whole. The other three remaining, corresponding to the Cabernet, to the Monastrell (bought from a
organic winegrower), as well as the Gorgollassa, which is its own, began to be vinified between September 28 and 29. Thus, three other separate vinifications were made, each with the flower must, obtained with a gentle pressing.
Once the 5 tanks are fermented, at a temperature of 19º, with daily punch-outs, initially and more separated later, were joined into one that was kept, at 15º and in contact with the fine lees and two weekly punch-ins, until clarification and bottling on March 25, 2019
