Viticulture:Parcel of 0,7 hectare located in Plà de Buc, Santa Maria. Wind buffets (“embat”), light sea breeze. “Call Vermell” soils, typical red clay due to its richness in non assimilable iron. High water retention, with loss from drought faster than other clays. 60-year-old Mantonegro in goblet vines, high value due to its genetic diversity. Minimum intervention viticulture, leaving the cover crop during cold season, giving advantage to its biodiversity. Minimum treatments, sulphur for pathogenic control. Annual production no higher than 2500kg/hectare.
Winemaking: Manual harvested in boxes of 15kg or less. Alcoholic fermentation takes place in a 2000L French oak foudre. Variable temperatures, lighter at the beginning and higher reaching the end, being totally free at the final stages of the microbiological process. Natural yeasts from the cellar or the grapes are used for fermentation; no sulphites added during this phase, even though wine is corrected at the end of it. 32 days maceration with non daily pumping over similar to pigeage for a couple of minutes, lighter at the end of fermentation. No clarifying is used.
Aging and Malolactic: Takes place in a 600L French oak barrel. 13 months aging, followed by a month stand in a stainless steel tank and bottle stand for 3 months more.
Production: 788 0,75L bottles.
