After de-stemming, the most is fermented with skins in new French oak casks of 500 litres, open lid. 5 day pre fermentative maceration. Daily manually stamping during the fermentation period of 20 days. Post fermentative maceration of 5 days before the “débourbage”.
A wine of garnet red colour with medium robe. Intense direct aroma of vegetable notes, red fruits with a balsamic background. Well balanced mouth which shows a perfect harvest. Good smooth acidity with a long after taste of balsamic memories.
