Mantonegro 15%, 75% Syrah

Harvest: Syrah was harvested during the second week of September 2009; Mantonegro Mallorcan native variety were harvested during the third of October 2009, like Cabernet Sauvignon. Manual in boxes of 15kg.

Aging: 12 months in French oak barrels.

Preparation: Select bunches during harvest. Selection winery before stripping. Fermentation temperature control, each variety individually in stainless steel tanks of small capacity. Malolactic fermentation in tank. Traditional Clarification with natural egg whites. Stabilization by cold
