Bear garlic, wild garlic seeds (Allium ursinum)

Wild garlic is known in northern Europe as a seasoning plant for cooking and medicinal, which can be found early in the year in the forests. In southern Europe, however bear's garlic is not a wild plant. The leaves are harvested before flowering from April to May.

In the kitchen, wild garlic pesto is delicious, but it can also be used in salads and in herb butter. If possible the wild garlic should be consumed fresh as cooked it loses much of its aroma. In folk medicine this garlic is used for stomach and intestinal problems, it has a high bactericidal effect.
